Forgive me if I am not in the right place to ask this questions. I've read many posts on different sites saying that most international STCW course are not recognized by the USCG and that I would have to redo the course in the states. This course-http://www.stcwthailand.com/ says this on its website: "All STCW courses are IMO Compliant and Approved by the Samoan Maritime Authority and recognized by all Maritime Authorities, including the MCA, AMSA and USCG." I would much appreciate any advice or guidance to a definitive answer. Thank you very much!

On the coast guard website, they have a approved courses page that lists them by course and by location. If it isn't on the list you can still pay an evaluation fee and submit your paper work to an evaluator to see if they'll accept it. If they don't then you'll have to redo the class within 90 days, or do it later and submit it again with another fee.
Take what you like and leave the rest behind.
