I was active duty AF for four years. For those four years I was an aircraft mechanic (crew chief) on the F-15. I got out in 2013 and joined the AF reserves and have been in the reserves since as an aircraft mechanic ( 1 year with the A-10 and going on 5 months with the C-5 now). I also work for the AF as a civilain now as an aircraft mechanic on the C-5. So my big question is would I be able to join AD CG without having to go to boot camp and become an AMT? Also do you get to choose what aircraft you work on? Thank you for your time.

You would have to go to boot camp, as the shortened version is for reserves only. As far as amt, the rating force master chief would have to approve you being rated out of boot and not requiring you to go to A-school. Which isn't likely, so that means you would start probably as an e-3 and then have to wait on the list for a-school
Take what you like and leave the rest behind.
